Blending Room

General Issues Concerning This Area

The blending room can be a dusty environment. Special attention must be given to

complete cleanup to minimize the attractiveness of this rooom to insects and other

pests. A proper cleanup means moving all items away from the walls and corners

to allow access for a thorough dry cleaning. The blending room should be used to

store only those major ingredients that are going to be used in that day's

production. Minor ingredients are stored on the upper level of the blending room.

All other ingredients must be stored in the Blending Warehouse Area.

2 Rinse thoroughly with water

General Issues Concerning This Area

This room is used for test baking and Quality Assurance. The Lab has a storage

freezer which backs into the Research and Development Area. The R & D area is

for exclusive storage of development supplies and equipment which may be used

on an infrequent basis. If supplies or equipment are for one time use they must be

moved to alternate starage facilities after use. Under no circumstances are regular

production items, neither ingredients or finished production, allowed to be stored

in this area

General Issues Concerning This Area

This is the main area used for shipping and receiving materials. It has a dock

level loading dock. Care needs to be taken to make sure trash doesn't build up

outside the doors. Make sure trash is removed reguarly and if the trash is

unusually attractive to pests that it is removed as soon as possible. Pests present a

potential problem if attractive materials are allowed to accumulate. The pests will

then migrate into the building. Inspect for unusual standing water and repair the

driveway surface is potholed such that water drainage is impaired. Check to make

sure light bulbs are in operating condition. Check to make sure door sills and

seals are sound.

Manufacturing Area

General Issues Concerning This Area

This is a big area with multiple sub areas. The cleaning of this room is

complicated by the fact that numerous operations may be going on at any one

time including the cleaning of various pieces of equipment. Generally speaking the

following operations take place in this room. 1. Assembly of ingredients.

Ingredients for the current production should be gathered into the cookie room

and assembled for scaling in the scaling area of the Manufacturing Room. 2.

Dough mixing. This activity results in some dusting and some spillage of dough.

This contamination must be properly cleaned at the end of every shift. 3. Forming

and feeding Spiral Freezer Belts. Dough spillage must be cleaned up at the end of

every shift. The belts must be brushed at the end of every shift. 4. Packaging of

frozen manufactured goods and transfer to freezer storage. 5. Equipment

clean-up. The mixing bowls and utensils such as padddles are cleaned in this

area. This will prevent contamination of product by cleaning materials and will

enable simultaneous cleaning with production.

4 Oil the pistons and replace them back into the machine

5 Clean dough and flour from the rounder

6 Clean dough and flour from baskets

7 Clean dough and flour from molding sheeter and wipe down with soap and water
